The young leaves can be eaten as a salad, and the roots can be dry-roasted and ground  for a substitute for coffee. The flowers open up early in the morning and close  around 2 or 3 Pm. Medicinal purposes:  liver ailments, tonics, laxaives, poultices made from the bruised leaves are for swellings and inflammation. Chicory is abundant this year (2002) in Wise County.
